Fair Espresso Martini
Recipe – FAIR Quinoa Vodka, FAIR Coffee liqueur, espresso, maple syrup
Where – Ethika & Ethika Wood Wharf
Our original all Fairtrade cocktail since 2019. FAIR is the world’s first Fairtrade certified spirits brand, meaning that they pay farmers a fair price, all ingredients are organically grown, vegan and GM Free. FAIR donates 2.5% of its revenues back to the Fairtrade foundation, and their vodka and coffee liqueur make a top Espresso Martini.

English Negroni
Our tribute to locally sourced ingredients… the Italian bitter classic reimagined with ingredients from North London. Everything in this drink comes from the small, family owned Sacred distillery in Highgate.
The founder of Sacred pioneered vacuum distillation, a process which uses 90% less energy than a traditional copper pot distillery, and saves 120,000 litres of water per year. Their gin and English vermouths also happen to make a banging Negroni, if the Italians don’t mind us saying.
Recipe – Sacred gin, Rosehip Cup, Spiced vermouth

Not Another Aperol Spritz
Recipe – Sacred Rosehip Cup, Sacred Spiced Vermouth, orange, soda, prosecco
Where – Everywhere
We don’t do big brands so you can’t have an Aperol spritz, right? Wrong. Our blend of English vermouths infused with fresh orange peels is just like the real thing, except a tiny bit more bitter (which we like).

Trash & Treasure
Recipe – Trash and Treasure rum, Don Q rum, ginger, lime, blackberry coulis
Where – Ethika Wood Wharf
One mans trash is another man’s treasure….. Trash & Treasure save would be food waste in the form of over-ripe bananas, dandelion root and citrus peel and turn them into a kick ass rum. Anything taking food waste out of the trash (not literally) and turning it into something we can drink is alright in our book.

Tiki Island Iced tea
Recipe – Don Q white rum, Cut Spiced rum, Velvet Falernum, Triple Sec, lemon, raspberry, rose & sage soda
Where – Ethika Tiki Bar
You can’t get everything locally right, so when we need to go international we look for pioneers among spirits producers and when it comes to cleaner, environmentally conscious rum production, Don Q is way out in front. 150 years’ worth of wisdom passed down through the Serrallés family who’ve been distilling rum in Puerto Rico for six generations can’t be a bad thing either. This is our take on the classic Long Island, with a Tiki island vibes twist obviously.

Tropical Gin & Tonic
Recipe – East London Kew Gin, Luscombe elderflower tonic, orange zest, mint
Where – Everywhere
Not so much a cocktail this one but a worthy mention; Yup, it's a gin that gives power to the pollinators, because there's no booze without bugs (because they pollinate the plants right).
Kew Gin, where East meets West (London) for the benefit of biodiversity. Kew's head botanist hand-harvests a monthly dump of Douglas fir and lavender for distillation and 10% of East London’s sales go back to supporting 260 years of science and 16,000 species of plants at Kew. Mixed with Devon made Luscombe elderflower tonic it makes a cracking G&T.
